The story
Dubuisson in Pipaix is Wallonia's oldest family-owned brewery, running since 1769. The beers are called Bush at home in Belgium and Scaldis for export, after the Latin name for the river Scheldt.
Caractère is amber and brewed for strength: 12% that shows as warmth rather than sweetness. One glass goes a long way, which is the idea. Guest taps 17-24 rotate continually, each beer stays on until the keg runs dry; ask at the bar what's pouring tonight.
