The story
Boon sits in Lembeek, the village south of Brussels that gave lambic its name. Frank Boon took over a dying brewery in 1975, when spontaneously fermented beer had nearly died out, and is credited with helping save the style.
Kriek is made with whole cherries refermented in the lambic. The result is dry rather than sweet: tart, stone-fruited and just 4%, closer to table wine than to soft drink.
