The story
Brasserie St-Feuillien sits in Le Rœulx in Hainaut and has been brewing since 1873. The name comes from Feuillien, an Irish monk said to have been killed in the woods nearby in the 7th century.
Saison is Wallonia's farmhouse style, originally brewed in winter to last the field workers through the summer. This one is golden and hazy, with pepper and citrus from the yeast and a dry finish that makes it more thirst-quenching than the strength suggests. Guest taps 17-24 rotate continually, each beer stays on until the keg runs dry; ask at the bar what's pouring tonight.
