The story
Chimay is brewed inside the walls of Scourmont Abbey in Wallonia, one of only a handful of breweries in the world allowed to carry the Trappist mark. The monks have brewed there since 1862, and what the brewery earns goes back to the abbey and to charity.
Blue, or Grande Réserve, is the heaviest of the house: dark brown, with dried fruit, caramel and a warm 9% finish. It is also the one built to age, changing in the bottle year by year. Guest taps 17-24 rotate continually, each beer stays on until the keg runs dry; ask at the bar what's pouring tonight.
